Cascabel Chillies are mild, slightly nutty dried chillies. They’re named for the rattling sound their seeds make. Toasting brings out the chilli’s earthy, acidic, well-rounded flavour but it’s the deep red colour that makes this one special - its crimson red colour bleeds beautifully into sauces and oils.
